American Meatloaf (My Own Version)

I've always loved the Filipino Meatloaf (Everlasting)! Last week, I tried making the American style and it turned out well! Finally, my dad loved a dish that is not Chinese or Filipino. ;) We even ate the burnt portion on the sides!

I did not copy the recipe on the net because it was too expensive so I made my own version and added some garlic gravy. :)

Here's the recipe. Hope you'll like it.

INGREDIENTS:
½ k ground pork
½ k ground beef
10 slices of white bread (approx 10 slices), edges removed, chopped and soaked in ½ cup evap milk
2 whole eggs
1 block of cheese, grated
1 pc. big white onion, finely chopped
1 pc. big red or green bell peppers, finely chopped

3 tbsps. of butter

Salt and pepper to taste

Gravy:
1 bulb garlic, finely chopped
3 tbsps. butter
1 beef cube
2 cups water
1 tbsp. cornstarch diluted in 1 tbsp. water
Optional: a splash of white wine

PROCEDURE:
1. Saute the onions and bell peppers in butter. Cool and set aside.
2. Mix the ground beef, ground pork, white bread, and eggs.
3. Add in the cooled sauted onions and bell peppers.
4. Season with salt and pepper.
5. Arrange it in a baking pan lined with aluminum foil or baking sheet.

6. Stuff it with grated cheese.
7. Bake it in a pre-heated oven at 350F for 40-50 minutes.
8. Top with more grated cheese just before taking it out from the oven.

For the Gravy:
1. Boil 2 cups of water with beef cube.
2. Add in the garlic and butter. Stir well.
3. Add in the cornstarch to slightly thicken it.
4. Adjust the taste and thickness accordingly.




My Birthday Wish Granted by "Quickfire"!

Last month, I saw an announcement on Quickfire's Facebook page inviting the viewers to submit their 10-minute recipes. I immediately thought of one and sent an e-mail to them. I wrote in my letter that I got my cooking skills from my late mom and it would be a privilege to be featured in their show, just in time for my 40th birthday.

My birthday had passed but I did not get any reply from them. One week later, I received a text message from one of the production staff, Ms. Georis Tuca, informing me that my recipe was chosen and I would get a chance to cook with Chef Rosebud Benitez. I was so excited but nervous at the same time for it will be my first time to appear on TV by myself, moreso in a cooking show.

The Quickfire team is so cool and very accommodating. All of them are very easy to work with, especially Direk Ogi, Ms. Georis, Ms. Andi and of course, Chef Rosebud. What you see is what you get - this is how I would describe Chef RB. No pretensions. She was very helpful in making me feel at ease during the taping. Not to mention that she really is one hot chef mom!

Furthermore, I felt very happy to show my pride for my mother's cooking skills. After all, if not for her, I would have not been able to get this opportunity.

Chowking Da King!

Last May, I knew about the Chowking’s Chinese-Style Fried Chicken Video Contest on Facebook. I immediately thought of a concept and made the shoot on May 17. Though it was a bit hard to take a video all by myself, I enjoyed doing it. I have combined various familiar expressions that would make the whole description of the product entertaining. Even though the contest had the “like” voting feature which I always avoid, I still joined because I was after the “judges’ decision” part in the criteria. I believed that my effort and creativity would be given fair credit with that aspect.

On May 31, I received an e-mail notification from Facebook that I was tagged by a friend in his post. I immediately logged in to my Facebook account and found out that the message he posted was a reply to Chowking PH’s announcement of winners for their video contest. It was only then that I realized that he tagged me to congratulate for winning the Grand Prize! I almost shouted but was able to restrain myself from doing so because I was in a public place.

I had been praying for this and even got more than what I had asked for. I was only wishing to be included as one of the runners-up and yet I got the top spot! Indeed, ask and you shall receive. As what Anna Manalastas (100 Days to Heaven) always blurts out, “Kuha mo?” I must say, “Yes, I got it! Thank you, Chowking! To God be the Glory!”

Chowking’s New Chinese-Style Fried Chicken is worth a try. It is definitely much better than their previous fried chicken recipe. It is juicier, crispier and even tastier without gravy! Although it is Chinese-style, it still has the flavor that the Filipinos always love. Try it now!

Choi Palace... Not Fit for Kings and Queens!

My sister wanted to treat us for lunch and we decided to go to Eastwood Mall (Libis, Quezon City) to find a new restaurant. She preferred to eat Chinese dishes so we went to Choi Palace. It was our first time to eat there and we had high expectations seeing the luxurious ambiance of the establishment.

While we were having a great time chatting, we almost forgot that it’s been 1 hour since we ordered. We also noticed that there were foreigners who came in later than us but got their orders much earlier than ours. There was a sense of discrimination. I thought maybe I should have brought my Chinese boyfriend along with us for them to extend the “special treatment” that they give to foreigners. My 5-year-old niece was already starving so we made the follow-up. It was only then that my brother-in-law was informed that one of our orders was out of stock (something like “lechon”). He didn’t complain any further and just changed that particular order. Then, it took them another 30 minutes to completely serve all our food. So, that was 1 hour and a half of hunger endurance!

Wait, there’s more! While our food was being served one by one, the waiter accidentally spilled the sauce of the shrimp with rice rolls over my brother-in-law! Whew! It’s a good thing that the sauce was not that hot. Otherwise, he would have really lost his cool. The waiter apologized but what was so disappointing (again), was the staff only gave him packets of wet tissue to wipe the mess off. Just imagine how hard it was to clean up just by using those wet tissues.

The only saving grace that time was their food. They are all delicious! I have nothing bad to say about the food quality BUT for the same taste, I can get that in other Chinese restaurants with much more EFFICIENT service and with more AFFORDABLE price.

Your food may be good but if your service sucks, it leaves a bad taste in the mouth!

Choi Palace... Your service is definitely not fit for Kings and Queens!

Fish Is It!

Finally, I decided to have my own food blog. Since this is my first post, I would like to start with my successful video entry which won 3rd Prize in the recent I Love Fish Video Contest, sponsored by Fishta Seafood.

I am fond of video contests. When I found out that Fishta Seafood is sponsoring a contest which would feature favorite fish recipes, I didn't have second thoughts knowing that it will be managed by Ms. Janette Toral. I have previously joined a video contest which she also administered and I really trust how she conducts such.

I chose to cook "Broiled Parmesan Tilapia" as my entry because this has been my most favorite fish recipe since I tasted one in Cookbook Kitchen at Eastwood City, only with a slightly different name which is "Parmesan Crusted White Fish".
